The Oil Mill 

The Olio Capalbio project born out of a passion for superior quality olive oil. This recent and evolving initiative combines the tradition and authenticity of the territory with artisanal innovation and continuous research. From the olive harvest to the oil pressing, the aim is to offer an authentic, natural and high quality product.

The production process

Olio Capalpio's oil is extracted using the cold-pressing technique, which preserves the valuable nutritional and organoleptic characteristics of the product. Selected from the excellence of Capalbio, their olives are pressed immediately after harvesting so that their qualities remain intact.

The production process is constantly monitored and studied at each stage, remaining artisanal. The machinery they have installed is new-generation and allows them to precisely record each step, thus guaranteeing a superior quality product, the result of dedication and care at every moment.

Certifications and Territory

To demonstrate their commitment, they have obtained IGP Toscana and Organic certifications, a guarantee of a genuine, authentic and safe oil. The bond with the territory of Capalbio is fundamental: its nature and the historical local agricultural tradition are the basis of our product. 

Products

After each production season they develop their oil lines. These are 100% Italian extra virgin olive oils, some organic, each with different organoleptic and taste characteristics. The olives come exclusively from the area of Capalbio and its surroundings, the heart of the Tuscan Maremma.
